1. Chick peas dish ( Cholas). This dish is delicious, prepared with some unusual ingredients such as freshly roasted pomegranate seeds and roasted cumin seeds, and Tamarind.
2. Rasmalai dessert. Prepared with freshly prepared with cottage cheese, rose water, saffron, cardamom, almonds and sugar
My Story:
People come to my cafe because they want to experience freshly prepared authentic Indian dishes in which the main ingredient is love! There is a certain degree of craftsmanship that goes into preparing Indian food that begins with a prayer, grinding fresh spices, and slow cooking. The Chef (Sabita) has a Ph.D. who is a professor in business with a passion for cooking. So, this is a labor of love! Food prepared by a person who loves cooking always tastes better than one that is prepared by someone who is just doing a job!
I mostly enjoy cooking authentic traditional recipes instead of creating new recipes. Over the years, the Indian diet has undergone a transformation because of changing lifestyles and the easy availability of packaged foods. The result: many dishes that were once prepared regularly at home have been forgotten, replaced by meals that are quick to the table. My focus will continue to be on reviving these traditional Indian recipes.
